Halo Halo
It's summer time, which means I crave a classic Filippino dessert on a hot summer day.
Halo Halo
Halo Halo literally means mix-mix. Probably because you throw all your leftover ingredients in the fridge and mix it into a delicious cold treat. It can consist of finely shaved ice, shredded young coconut (macapuno), beans, boiled banana chunks, sago, gelatin and topped with ice cream. It may sound disorderly, but that's filippinos for you! :-) Trust me it is refreshing.
Halo Halo
1 c sweetened garbanzo beans, drained
1 c sweetened beans, drained
1 c red kaong, drained
1 c nangka (jackfruit), drained
1 c sweeten macapuno
1 c sweetened plantains
1 c sweetened corn kernels
1 (250ml) evaporated milk
crushed ice to fill glass
a scoop of ice cream
halayang ube (optional)
corn flakes or rice crispies (optional)
You can either layer the first 7 ingredients in a cup (adding about 2 tbsp of each ingredient to a cup) or you can combine the first 7 ingredients together and then continue on.
Fill your glass about 3/4 full of the mix then top off with shaved ice.
Pour about 1/2c of evaporated milk over the ice and top with ice cream & rice crispies.
Mix-mix and enjoy!
The beauty of this recipe is that you can make it however you like. If you want more coconut, go ahead & add more of that. Don't like jackfruit, leave it out. All the ingredients can be found in any Asian market, you most likely won't find it at your local ShopRite.
